How it is made
Our winery obtains its sparkling wines directly from the must, which undergoes a prise de mousse with selected yeasts for a period of one month at a controlled temperature of 12-15°C. This allows the wine to preserve its characteristic freshness and for its aromatic notes to be enhanced.
This prise de mousse is arrested by lowering the temperature of the pressurized tank in order to guarantee the desired level of residual sugar.
This sparkling wine that comes from the slopes of the D.O.C.G. area in the Province of Treviso – the prestigious, historic area for Prosecco wine – highlights extremely successfully the typical finesse of the Valdobbiadene hills.
Indeed, the Prosecco Superiore from Maschio dei Cavalieri bursts forth with fruity aromas – such as apple, pear and peach – and a bouquet of white flowers.
Classy – Attractive
The most frequently used version is of thick, dark glass. It has a pronounced “punt” at the bottom. It is typically used for fine, high-class sparklers, such as D.O.C.G. and Vintage wines.
